UNL scientist Mandigo makes it to meat pinnacle
Meat scientist Roger Mandigo’s induction Saturday in Scottsdale, Ariz., was into the Meat Industry Hall of Fame. And his biggest claim to fame outside that industry is research that led to the introduction of McDonald’s McRib sandwich in 1981.
I’m not sure what I like best about this story. Here are some options:
- There is a Meat Industry Hall of Fame;
- Roger Mandingo’s official job title seems to be “Meat Scientist”;
- This quote, from some guy who loves the McRib, and was seen debating whether to eat two at once or save one for later: “It’s like a hotdog,” he said. “What’s in a hotdog? If it tastes good, go ahead.”
- This photo of Mandingo, with meat and McRib packaging, which is not necessarily ironic in any way:

Having said all of that — and had a little laugh, too — let me honestly congratulate my colleague for well-deserved recognition of a career filled with many serious accomplishments.
We’re innovators here at the University Nebraska … and if some man or woman wants to turn those innovations into a McRib sandwich, well, who are we to stop him or her?!
